Would this be a suitable motor for a spinner, https://hobbyking.com/en_us/turnigy-...ner-motor.html

I'm not looking to build the spinner as my first beetle, but since I'm doing a hobbyking order I want to order as much stuff as possible for my second build too

That's pretty overkill for beetles, all of mine run NTM 28-36's at 1400kv without issue. They spin discs from 250-400g without any hassle on a 30a esc.

I would say its definitely on the high end, but would work fine with a 40a esc and slightly bigger battery. For reference I run a 650w turnigy outrunner with a 40a plush esc which works ok

Is there any harm in running a motor with say a 30a load on an ESC that's like 60a? Any reason not to go too high on the ESC?

Nah, only really weight and space, it is nice to be on the safe side sometimes
